2006 Arrowfield Estate Shiraz

Winemaker Notes
A combination of intensely flavoured, elegant cool climate shiraz from the Central Ranges region of NSW with complex, savoury Hunter shiraz.  Lifted raspberry, plum and white pepper aromas carry onto the long, intense palate and integrate seamlessly with the savoury tannins and toasty French oak.

Winemaking Process
The Shiraz grapes were fermented in small open fermenters. A batch of the Hunter shiraz was co-fermented with the white Viognier grape. The ferments were allowed to reach 24C before finishing the remainder of the ferment at 20C. The wine was matured in 20% new and 80% 1 – 3 year old French oak Hogsheads for 9 months prior to a light filtration and bottling.

Gourmet Notes
Try it with braised ox cheek served between potato gratins drizzled with red wine sauce.
